  • Fill the Freezer: Onions and Peppers

    Last week, I browned hamburger in the crock pot.  So easy.  Allowed me to do a large quantity at once. 

    This week, I'm chopping peppers and onions for the freezer.

    First, prep and chop.  Then place the peppers in a single layer on a baking sheet.  Put in the freezer for an hour.  Pour the peppers in freezer bags for the freezer.  Doing this prevents the peppers from freezing in a clump, allowing me to grab a handful of pepper and add to whatever I am making.  Repeat with onions.

  • As a matter of fact, I put some French toast in my freezer yesterday. I had about 3 pieces of bread left in two bags (no one ever wants that last piece) that would either be trash or bird food. They weren't soft enough for sandwiches, but you don't want bread that is too fresh for French toast. So I made up six slices in the oven and popped them in the freezer. I flash froze them just like you did with the onions and peppers.

    I've got chopped onions frozen already, but I have to watch for peppers to go on sale. I'm thinking sausage and pepper heroes in the near future!

  • We recently got a deep freeze and I'm so excited to put it to good use so I can use my kitchen freezer for things like this!
