  • Monkey Bread

    Thinking of making this later today for my "monkeys".  Just right for a cold snowy day, don't you think?

    2 cans of biscuits

    1/2 stick of butter

    Sugar

    Cinnamon

    Vanilla
     

    Pre-heat oven to 375.  Lightly butter a bundt pan.  In a bowl combine 2 C of white sugar with a couple teaspoons of cinnamon and a dash of Brown Sugar. Cut each biscuit into 4 pieces. Roll the biscuit pieces in the sugar mixture until well coated. Drop the biscuits into your bundt pan.  In a small saucepan over medium heat bring 1/2 stick of butter, 1 C sugar and roughly 1 tsp of vanilla to a boil. Pour this evenly over the biscuits in the bundt pan. Bake for about 25-30 minutes.

    I enjoyed taking a cooking class this fall at our Homeschool Enrichment Center.  One of the first things we learned to make was granola.  My family and I liked it so much that I wanted to continue making it.  I changed the recipe to suit our family's taste. 

    • 3 cups old fashion oats
    • 1 1/4 cups whole wheat flour
    • 1/2 cup packed brown sugar
    • 1 cup almonds
    • 1 cup pecans
    • 1 cup flaked coconut
    • 1/4 cup shelled sunflower seeds
    • 1/2 cup nonfat dried milk powder
    • 1/2 teaspoon salt
    • 1 teaspoon cinnamon
    • 1/2 cup vegetable oil
    • 1/2 cup water
    • 1/4 cup honey
    • 1 teaspoon vanilla extract

    Preheat oven to 275 F.  Combine dry ingredients in large bowl.  Whisk oil, water, honey, and vanilla in medium bowl.  Pour over dry ingredients and mix well.  Place on baking sheet (I sprayed mine with cooking spray) and bake until granola is golden and crunchy (approximately 55-60 minutes), stirring frequently. Store in an airtight container.

    My cooking instructor gave us a neat little tip.  She said anytime you have a recipe that calls for oil and honey, pour the oil in the measuring cup first.  Follow with the honey.  The honey will slide right out of the cup.

    Hope you enjoy the granola.  My dad thinks it is the best granola he's ever had!

     

  • Homemade Cinnamon Rolls

    Started out with big plans for the holidays.  When little ones started getting sick, I had to cross some things off the list. 

    I really wanted to make homemade cinnamon rolls

    I'm tucking this recipe here for next year.   Maybe I can make them early and freeze them to be thawed and baked during the busy holiday?

  • Pumpkin Spice Muffins

    I can't remember how I found The Full Table, a blog devoted to frugal cooking but I'm sure glad.  I made the Pumpkin Spice Muffins and they were a huge hit!  You'll have to go to The Full Table for the recipe.  It makes 30 muffins for aproximately $2.00!  They are delightful!

    As you can see, they were disappearing quickly!  I made 24 regular muffins and 24 tiny muffins.  

    We are planning to try the chicken pot pie next (serves 8 - 12, cost is aprox. $7.50).
