Oatmeal Pie
The chief of our tribe loves oatmeal pie. It is a Thanksgiving must. So delicious and easy to make.
3 eggs (slightly beaten)
1 cup of sugar
1 cup of KARO syrup (light or dark)
1 t vanilla
2 T of butter (melted)
2/3 cup of oatmeal
unbaked pie crust
In a medium bowl, combine first five ingredients. Add oatmeal and stir. Pour into unbaked pie crust. Bake at 350 degrees for 50 minutes. Serve warm topped with vanilla ice cream.
The chief likes them cold. He's all about the gooey-ness.
Substitute the oatmeal with 1 1/2 cups of pecans for a delicious pecan pie. My favorite is to combine oatmeal and crushed pecans. Mmm...Mmmm!
